The Company: 

This is a Brand New Opening of a Japanese fine dining restaurant, connecting the Traditional and Modern into a Nikkei style cuisine.

This lounge bar restaurant  with Fine Dining  located in Guadalajara, Jalisco Mexico.

The Restaurant will have 200 covers, Bar capacity 30 covers , terrace 40 covers.

We are looking for a Nikkei cuisine specialist Japanese Chef Consultant with long years experience in such cuisine to help out with the opening of the restaurant, Menu design and development, Chef training for dishes production


Job Title: Head Chef Sushi

  • Minimum of 10 years culinary experience or equivalent in Nikkei cuisine
  • Possible background at known Nikkei restaurants- Nobu, Zuma, Roka and similar japanese fine dining restaurants or upscale Japanese restaurants.
  • International experience
  • Spanish speaking is Optional but not necessary
  • Extensive knowledge of culinary leadership, kitchen operations
  • Solid knowledge of Menu / recipe development, recipe conversions and weights and measures.
  • Strong knowledge of restaurant food preparation equipment.
  • Capable of teaching and training others in a constructive and positive manner.
  • Organized and systematic approach to work and the ability to prioritize efficiently and delegate responsibilities.
  • Excellent communication skills and willingness to work as part of a team.
  • Food safety certification.
  • Ability to work a flexible schedule and travel to Mexico on a very short notice
  • USDA/ HACCP experience helpful.
  • Food styling experience
  • Genuine passion for food!

  • At least 2 years on similar position in japanese fine dining restaurants or upscale restaurants
  • Fast, Clean, Great fish filleting skills
  • Good people skills to manage a team in Head Chef’s absence
  • Customer service skills
  • HACCP training

Contract type: Full time / Permanent
